TEQUILA STARTS TO STRETCH ITS WINGS

You know the drill: when a category gets hot, the new expressions start coming and never stop.

Patrón Tequila is aiming high with Gran Patrón Piedra. Besides being aged three years in oak, this extra añejo is crafted using the ancient “Tahona” process by which steam-cooked agave is slowly crushed with a large Tahona stone wheel; the resulting juice is then fermented and distilled along with the agave fiber. (Piedra is Spanish for stone.) In keeping with its pedigree, Piedra starts with agave that was first hand-picked and then hand-selected; and the hand-numbered bottles come in a box that converts into a display case.SRP $399; patronspirits.com

Meanwhile, perhaps inspired by the success of Patron’s XO Café, Cabo Wabo has introduced a coffee liqueur blended with tequila, rolling out in NY, NJ, CT, MA and WI. The 70 proof Cabo Diablo sports a color-changing label with a “devilish surprise” appearing only when the bottle is chilled. SRP $22.99; cabowabo.com

A BRIGHT IDEA FOR BARS…

That classic image of a neon sign buzzing and flickering in a bar window may soon be a thing of the past. Florida-based Brytertek Corporation has patented optical technology to create cost-saving, environmentally friendly signs using LEDs. Unlike early attempts to use LED for signs, the new technology enables vivid, photo-quality images in multiple colors—while using 90% less power. Cost: $129-$399/sign.

POLAR SELTZERS LURE MIXOLOGISTS WITH BOLD, BUBBLY NEW FLAVORS

Family owned and run in Massachusetts for over a century. Polar Seltzer is not afraid to shake things up. Their seasonal, limited-edition “Bartender’s Series” seltzers have been rightly attracting attention from mixologists. Each entry has no calories, no cholesterol, no fat—and the truly distinctive personalities make novel (and easy) bases for cocktails. Previous special seltzers include Cucumber Melon, Piña Colada, Triple Berry and Ginger Lemonade. Surprisingly concentrated and naturally refreshing, the pure flavors just scream for dollop of a favorite liquor and perhaps a touch of simple syrup and, of course, great ice. The Piña Colada seltzer for instance, with flavors of toasty coconut, pineapple and a touch of citrus, sang with some light rum; and the Triple Berry proved masterful with a splash of Four Roses Small Batch Bourbon. The Winter 2013 edition is out now and ready to inspire. Seltzers returning from last winter are Mint Chocolate and Butter Rum. New ones are Fudge Cheesecake, Toasted Coconut Cream Seltzer and Champagne Strawberry.
