Cocktail Corner: Summer ‘Tails

With the summer months comes a drastic (and welcome) change in cocktail choices—from warm and rich to cool and refreshing. Regardless of base spirit, whether its vodka, gin, rum or even whiskey, light and fresh ingredients are key to keeping summer cocktails enjoyable all season long.


Pineapple Ginger Caipirinha

Backyard BBQs lean toward the ease of beverages that can be grabbed from a cooler, but Hard Rock Café is cutting a bold path with its May-thru-June World Burger Tour. Echoing the chain’s global-local image, the menu features “Local Legendary Burgers” (Andean Burger, Schnitzel Burger, et al) and a set of brand new cocktails to mix and match with the burgers.










8 Lime cubes

4 Pineapple chunks

¾ oz Simple Syrup

2 oz Agua Luca Cachaça

½ oz Domaine de Canton Ginger Liqueur

In a cocktail shaker, muddle the lime, pineapple and simple syrup. Add in ice, cachaça and ginger liqueur. Shake and pour into a rocks glass. Garnish with pineapple wedge and lime wedge.


Cucumber Mule

Moscow Mules are summertime favorites, mostly because they are easy to drink on a hot day. Ty Ku’s new Cucumber Saké adds a vegetal note to this cocktail, making it slightly more savory than the original.











1½ oz TyKu Cucumber Saké

½ oz Vodka

½ oz Ginger Syrup

¼ oz Agave Nectar

½ oz Lime Juice

Combine all ingredients in a copper mug with fresh ice. Garnish with a lime wedge.



Rum is a summertime staple; pairing with watermelon purée makes for an even more seasonal drinking experience. Be sure to smash the basil leaves in your hands before garnishing to release its flavor and aroma. 








2 oz AfroHead Rum

1 oz Fresh Lime Juice

1 oz Simple Syrup

1½ oz Watermelon purée

3-4 Basil leaves

Shake and strain all ingredients into a chilled martini glass. Garnish with smashed basil leaf.


Lemongrass Cooler

Lemongrass makes for a unique and summer-forward flavor in this cocktail. The vodka acts as a well-made blank canvas, and the lemongrass and lemon juice provide herbal and citrus notes for a refreshing sip.













1½ oz. Reyka Vodka

1 oz. Fresh Lemon Juice

1 oz. Club Soda

Lemongrass Straw

Combine all ingredients over ice in a highball glass. Stir and garnish with a lemongrass straw.


Irish Maid

While naturally popular in the cold-weather months, whiskey works as a great base spirit in summer cocktails as well. The deep, complex flavors of the Jameson Black Barrel work in tandem with the sweetness of elderflower and tartness of lemon for a well-balanced, full-bodied cocktail.











2 oz Jameson Black Barrel

½ oz Elderflower Liqueur

¾ oz Lemon Juice

¾ oz Sugar Syrup

2 Cucumber chunks

Muddle cucumber and combine ingredients into a shaker. Add ice and shake vigorously. Fine-strain into an ice-filled rocks glass. Garnish with a thin slice of cucumber.
